Beer Smoked Rabbit


1 Whole Rabbit (Cleaned and Washed)

2 12oz Cans of Beer
1 Onion (Diced)
2 Cloves of Garlic (Chopped)
4 Slices of Bacon (Diced)
Seasonings (Salt, Pepper or Fajita Seasoning)



 Season rabbit. Open each beer and drink about half of the beer from each can. Divide evenly and stuff onion, garlic and bacon into each can. Ease rabbit over beer cans, feet down, until rabbit is resting on cans. Cans must remain upright at all times. Add a handful of soaked wood chips to preheated 220 degree smoker. Place rabbit and beer cans on smoker grate and close lid. Smoke for 2 hours at 220 degrees, or until legs ["wings" if smoking a chicken] wiggle easily.
