Breakfast Taquitos


1 Pound Rabbit Meat (Coarsely Ground or Chopped)
1 Teaspoon Poultry Seasoning
Salt and Pepper to Taste
3 Tablespoons Cooking Oil
1 Can Tomatoes/Green Chilies (Hot or Mild)
2 Cups Ore Ida Frozen Potatoes O’Brien (Thawed)
5 Slices American Cheese
5 Slices Swiss Cheese
10 Eggs (Beaten)
10 Flour Tortillas (Warmed)


Heat oil over medium heat in skillet. Add rabbit meat, poultry seasoning, salt and pepper. Cook and stir for 15 minutes or until rabbit is done. Add tomatoes and potatoes. Simmer 5-10 minutes. Add eggs and cheeses. Increase heat, stirring constantly until eggs are scrambled and cheese has melted. Spoon desired amount onto a flour tortilla, then roll. Serve with picante or hot sauce.
